Kritharoto with vegetable turkey

  • 500 g Whole Wheat Kritharaki (orzo) HELIOS

  • 80 ml olive oil

  • 1 onion

  • 2 cloves of garlic

  • 1 tablespoon of tomato paste

  • 1 eggplant

  • 1 zucchini

  • ½ yellow pepper

  • ½ red pepper

  • ½ green pepper

  • 120 ml white wine

  • 1.300 ml vegetable broth

  • 1 chilli pepper

  • 200 g coloured cherry tomatoes

  • 50 ml of petimezi (grape syrup)

  • 150 g feta cheese

  • Salt, pepper


Wash the vegetables and cut them all into medium cubes. Clean the onion and cut it into medium cubes. Finely chop the garlic.

In a saucepan, heat the olive oil. Add the onion and garlic and sauté for 2 minutes. Add all the vegetables (eggplant, squash, peppers) and sauté for 6-7 minutes, stirring.

Season with salt and pepper and add the kritharaki (orzo). Stir for 1 minute and add the wine. Let it boil and allow the alcohol to evaporate Finally add the chilli and the broth,  slowly two times and cook for 25 minutes. Add the cherry tomatoes cut in half and stir. Add the ‘’petimezi ‘’and crumbled feta cheese. Your kritharoto is ready.
